Apple Bacon Bruschetta with Blue Cheese

This fall twist on bruschetta will help ease the transition to a new season.


  • 1 (10-11 oz.) baguette, sliced into ¼” thick slices
  • 1 Tbsp. olive oil
  • ¼ tsp. kosher salt
  • ⅛ tsp. ground black pepper
  • 4 slices bacon, chopped
  • 2 large apples, cored and diced
  • 1 Tbsp. apple cider vinegar
  • ¼ cup chopped green onion
  • ½ cup blue cheese


  1. Heat oven to 425°F.
  2. Place bread slices on baking sheet; brush with olive oil and season with salt and pepper. Bake 12-15 minutes until golden brown; set aside.
  3. Place bacon in a large skillet over medium heat. Cook for 4-6 minutes until fat is rendered and bacon is crisp. Remove bacon pieces leaving fat in the skillet. Add apples to the skillet cooking 3-5 minutes until tender but not soft. Add apple cider vinegar; cooking until it is almost evaporated.
  4. Remove pan from heat. Stir in cooked bacon, green onions and blue cheese. Divide mixture between toasted bread.
  5. Refrigerate leftovers.


Apple mixture can be made a day ahead of time and stored in the refrigerator. Top bread slices and reheat in the oven for a few minutes.
