Avocado adds a creamy texture when it’s blended into a no-bake lime pie filling.


  • Crust

    2 cups fine shredded unsweetened coconut
  • 2 Tbsp. sugar
  • 5 Tbsp. butter, melted
  • Filling

    2 Haas avocados
  • 8 oz. cream cheese, softened
  • 1 can (14 oz.) sweetened condensed milk
  • ½ cup fresh squeezed lime juice
  • 2 Tbsp. lime zest
  • ¼ tsp. fine salt


  1. Heat oven to 350°F. Mix coconut, sugar and butter together in a bowl until well blended. Press in the bottom and up the sides of a deep 9” pie plate.
  2. Bake 6-8 minutes until lightly golden brown. Place on wire rack and allow to cool completely.
  3. In a mixing bowl, beat cream cheese and avocados until smooth. Add condensed milk, lime juice, zest and salt; continue beating until well blended.
  4. Pour filling into crust and smooth surface. Refrigerate at least 2 hours or until firm. Serve with lightly sweetened whipped cream if desired.
  5. Refrigerate leftovers.
