This quick and simple recipe features chicken breasts simmered in a combination of spices, tomatoes and balsamic vinegar.


  • 6 boneless skinless chicken breasts
  • 2 Tbsp. olive oil
  • Salt and freshly ground pepper, to taste
  • 2 cloves garlic, crushed
  • 1 small onion, finely chopped
  • 1 can (14.5 oz.) diced tomatoes
  • ¼ cup balsamic vinegar
  • 1 Tbsp. oregano, dried
  • 1 ½ tsp. fresh thyme, minced
  • 1 tsp. fresh rosemary
  • 2 Tbsp. fresh basil, chopped
  • Brown rice, cooked


  1. Heat olive oil in a large skillet with lid. Season chicken breasts with salt and pepper. Sauté garlic and onion for 2 minutes. Add chicken breasts and quickly sear on both sides.
  2. Combine tomatoes, balsamic vinegar, oregano, rosemary and thyme. Mix well. Pour over chicken. Cover with lid and simmer until chicken is no longer pink, about 12 minutes or until internal temperature reaches 165° F. Top with basil and serve with brown rice.
