Simple homemade blue cheese crackers pair nicely with fresh strawberry basil salsa in this fresh appetizer.


  • 1 stick butter, softened
  • 8 oz. blue cheese crumbled, at room temperature
  • ¾ cup almond meal
  • 1 cup all-purpose flour
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 16 oz. strawberries, stemmed, hulled and chopped
  • ¼ cup red onion, finely chopped
  • ¼ cup basil, chopped
  • 1 Tbsp. white balsamic vinegar
  • 1 Tbsp. olive oil
  • ¼ tsp. Kosher salt


  1. In the bowl of a food processor place butter and cheese; blend until well combined. Add almond meal, flour, salt and pepper; pulse until blended. Form dough into a log about 1½” in diameter. Wrap in plastic food wrap; refrigerate at least 2 hours.
  2. Heat oven to 375°F. Line baking sheet with parchment paper.
  3. Slice dough into about ¼” thick piece. Place on prepared pan 2” apart. Bake 10-14 minutes until lightly golden brown. Allow to cool completely.
  4. Meanwhile, toss together strawberries, onion, basil, vinegar and salt. Serve salsa with crackers. Store leftover crackers in an airtight container.
  5. Refrigerate leftover salsa.
