Description

Trade tomatoes for blueberries in this sweet-savory game day snack.

Ingredients

  • 1 loaf baguette, cut into 45 1/4" slices
  • ¼ cup olive oil, divided
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 1 ball fresh mozzarella, cut into quarters and thinly sliced (1 ball = 8 oz)
  • 2 cups fresh blueberries, roughly chopped
  • ¼ cup basil, chopped
  • ¼ tsp minced garlic
  • ⅛ tsp kosher salt
  • balsamic vinegar, if desired

Directions

  1. Heat oven to 400°F.
  2. Brush baking sheet and bread slices with 3 tablespoons olive oil. Season with salt and pepper. Bake 12-15 minutes until lightly browned and crisp.
  3. In a bowl toss together remaining olive oil, blueberries, basil, garlic and salt.
  4. Top bread slices with mozzarella cheese and blueberry mixture. Drizzle with balsamic vinegar if desired.
  5. Refrigerate leftovers.
