Description

Try these fruit and nut based bite sized treats the next time you need a boost of energy.

Ingredients

  • 2 cups raw cashews
  • 2 cups Medjool dates, pitted
  • 1 cup dried blueberries
  • 3 Tbsp. coconut oil
  • ½ tsp. fine salt
  • 1 tsp. vanilla

Directions

  1. Place cashews in bowl of food processor; process until nuts are finely chopped. Add remaining ingredients and blend until sticky and combined.
  2. Using a cookie scoop form mixture into 1½” balls. Store in an airtight container for up to 1 week.

Tips

These can be stored in the refrigerator or freezer to extend the shelf life.
