A good steak needs little more than salt…this version goes to the next level with a savory herb salt!


  • 2 tsp. Kosher salt
  • 1 tsp. coarse ground black pepper
  • 1 tsp. rosemary, finely chopped
  • 1 tsp. thyme, finely chopped
  • ¼ tsp. garlic, finely minced
  • 1 bone-in ribeye (about 1½” thick), patted dry
  • 2 Tbsp. canola oil


  1. Heat oven to 425°F. In a small bowl blend together salt, pepper, rosemary, thyme and garlic. Season steak on all sides with herb salt.
  2. Heat a 12” cast iron or heavy bottom, oven safe skillet, over medium-high heat; add oil. When oil is hot add steak; searing 1-2 minutes; flip sear another 1-2 minutes.
  3. Transfer pan to the oven to continue cooking 10-15 minutes until internal temperature reaches 135°F for medium (temperature will continue to rise while resting).
  4. Remove steak from pan, cover with foil and allow to rest 5 minutes before serving. Refrigerate leftovers.
