The bourbon and brown sugar glaze blankets these wings with a complex sweet and spicy flavor. The dip, made with true-blue Seattle cheese, is creamy and irresistible! You can make the glaze up to three days ahead, but wait until the day of serving to make the accompanying dip. Pair these wings with an Old Seattle Lager or Manny's Pale Ale.


  • 3 Tbsp. unsalted butter, divided
  • 3 Tbsp. brown sugar, packed
  • 2 white onions, roughly chopped
  • 2 garlic cloves, minced
  • ¾ cup bourbon
  • ¼ cup tomato paste
  • ½ cup Sriracha sauce
  • ¾ cup ketchup
  • 30 chicken wings, separated, tips removed
  • Pinch of all-purpose flour
  • ½ cup milk
  • ½ cup Washington blue cheese (such as Big Boy Blue), crumbled
  • 1 bunch chives, chopped


  1. Heat the oven to 375° F. Melt 2 tablespoons of butter in a saucepan over medium heat and sprinkle the brown sugar over it. Cook the sugar for 2 minutes, stirring occasionally.
  2. Add the onions and garlic to the saucepan. Cook for 2 minutes, stirring occasionally. Add the bourbon and simmer until reduced by half, about 10 minutes.
  3. Add the tomato paste, Sriracha and ketchup. Simmer until thickened, about 5 minutes. Remove the sauce from the stove and set it aside to cool slightly.
  4. Place the wings in a large mixing bowl and pour about ¾ of the sauce over the wings. Toss the wings and sauce. Reserve the remaining sauce.
  5. Line two sheet pans with aluminum foil. Place a wire rack on each sheet pan. Arrange the wings on the wire racks and place the sheet pans in the oven.
  6. Bake the wings until they reach an internal temperature of 165° F, about 45 minutes.
  7. Make the blue cheese dip while the wings cook. Melt 1 tablespoon of butter in a small saucepan over medium heat. Add a pinch of flour and cook for 1 minute. Whisk in the blue cheese crumbles a tablespoon at a time until incorporated, whisking frequently.
  8. Remove the wings from the oven. Transfer them to a mixing bowl and pour the remaining sauce over them.
  9. Sprinkle the chives over the wings and turn them to cover. Serve right away with dip on the side.
