A buckle is a simple cake with a streusel topping, making it a great option to serve with coffee or as dessert.


  • ¼ cup Butter
  • 2 cups All-purpose Flour
  • 1 ½ tsp Baking Powder
  • ¾ cup Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • ½ cup Whole Milk
  • 2 cups Rainier Cherries, pitted and cut in half

    ½ cup All-purpose Flour
  • ½ cup Sugar
  • ¼ tsp Ground Cardamom
  • ¼ cup Cold Butter, cut into pieces


  1. Heat oven to 350°F. Butter an 8” square baking pan; set aside.
  2. In a skillet melt butter over medium-low heat. Allow to continue cooking until lightly browned; remove from heat, pour into a large mixing bowl and allow to cool.
  3. In another bowl whisk together flour, baking powder and salt. Set aside.
  4. In the bowl with butter beat in sugar, egg and vanilla until well incorporated. Add ⅓ of the flour mixture and mix until combined. Add half of the milk until combined. Repeat ending with flour mixture. Fold in cherries; pour into prepared pan.
  5. In a small bowl combine crumb topping ingredients until crumbly. Sprinkle over cake. Bake 40-45 minutes until toothpick comes out clean. Place on wire rack to cool.


Tip: The buckle can be served warm but allow to cool at least 10-15 minutes before serving.
