Butternut Squash Flatbread with Spicy Sausage

Sweet butternut squash, spicy sausage, and just the right amount of bitterness from broccolini combine with fresh mozzarella for a delicious flatbread that’s sure to be a new dinner favorite.


  • ½ tsp olive oil
  • ½ tsp minced garlic
  • 6 oz spicy italian sausage, removed from casing
  • 4 oz butternut squash, thinly sliced
  • ¼ tsp kosher salt
  • ¼ tsp ground black pepper
  • 3 oz broccolini, sliced on a bias
  • ¼ cup water
  • 1 pkg naan flatbread
  • 4 oz mozzarella, sliced
  • salt and pepper, to taste


  1. Heat oven to 450°F. Mix olive oil and garlic together in a small bowl; set aside.
  2. In a skillet over medium-high heat, cook sausage, breaking apart until no longer pink inside; remove to drain on paper towels. Wipe skillet clean.
  3. Brush butternut squash with garlic oil and season with salt and pepper. In the same skillet, cook squash slices 2-3 minutes on each side until lightly browned and tender; set aside.
  4. Add broccolini to the skillet with water; allow to cook 2-4 minutes until tender; set aside.
  5. Place flatbread on a baking sheet, spread remaining oil mixture on top. Evenly spread squash, broccolini and sausage. Top with cheese and season with additional salt and pepper.
  6. Bake 8-10 minutes until golden brown.
  7. Refrigerate leftovers.
