Puff corn is coated with homemade caramel and mixed with salted cashews for an addicting sweet and salty treat.


  • 22 cups puff corn
  • 2 cups roasted and salted cashews
  • 1 cup butter
  • 1 ½ cups brown sugar
  • ½ cup light corn syrup
  • 1 tsp. baking soda
  • 2 tsp. vanilla


  1. Preheat oven to 250°F. Coat a large roasting pan with non-stick cooking spray. Add puff corn and cashews tossing to combine; set aside.
  2. In a 3-quart sauce pan over medium heat add butter, brown sugar and corn syrup. Cook stirring occasionally until mixture comes to a full boil; continue cooking 5 minutes. Remove from heat and add baking soda and vanilla (mixture will foam).
  3. Pour caramel mixture over puff corn, stirring to coat.
  4. Bake 1 hour, stirring every 15 minutes. Pour on wax or parchment paper to cool. Store in an airtight container.
