This elegant dessert is the perfect way to celebrate (and devour!) fresh pears.


  • crust

    1 ¼ cups all-purpose flower
  • ¼ cup sugar
  • ¼ tsp fine salt
  • ½ cup cold butter, cut into pieces
  • 1 egg yolk
  • 2 - 4 tbsp ice water
  • cardamom almond cream

    ¼ cup butter
  • ⅓ cup sugar
  • 2 large eggs
  • 1 cup almond flour
  • 1 tsp vanilla extract
  • ½ tsp ground cardamom
  • 2 ripe pears, cut in half, cored and thinly sliced. Powdered sugar if desired


  1. Add flour, sugar and salt to the bowl of a food processor. Pulse to mix. Add butter and process until the texture of coarse crumbs. Add egg yolk and just enough water for the crust to hold together. Do not overwork.
  2. Flatten dough into a disk, wrap in food plastic wrap. Refrigerate at least 2 hours or overnight.
  3. In a bowl beat together butter, sugar and eggs until light and fluffy. Add almond flour, vanilla and cardamom until combined.
  4. Heat oven to 375°F.
  5. Roll dough on a lightly floured surface to a 12” circle. Fit into a 10- or 11” tart pan with removable bottom. Spread cardamom almond cream over crust. Lay pears slices over cream. Bake 25-30 minutes until golden brown. Dust with powdered sugar if desired. Serve warm or at room temperature.
