Description

For a warming but healthy meal try this Indian spiced chickpea stew served over brown rice.

Ingredients

  • 2 Tbsp. ghee
  • 1 small onion, chopped
  • 1 tsp. minced garlic
  • 1 jalapeño, finely chopped
  • 1 Tbsp. garam masala
  • 1 Tbsp. coriander
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. turmeric
  • 1 can (14.5 oz.) petite diced tomatoes
  • ½ cup water
  • 2 cans (14.5 oz.) garbanzo beans, drained and rinsed
  • 1 Tbsp. fresh lemon juice
  • ½ tsp. salt

Directions

  1. Melt ghee in a 3-quart saucepan over medium heat. Add onion, garlic and jalapeno; cook 3-4 minutes to soften. Add spices and continue cooking, stirring occasionally 1-2 minutes.
  2. Add tomatoes and water, working up any brown bits from the bottom of the pan. Add garbanzo beans and simmer 10-15 minutes. Add lemon juice and salt; adjust seasoning to taste. Refrigerate leftovers.
