Description

Shrimp roasted with a sweet and spicy rub with fresh cabbage and avocado cream take taco night to the next level.

Ingredients

  • 2 Tbsp. brown sugar
  • 1 Tbsp. paprika
  • ½ tsp. ground chipotle
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 lb. medium shrimp, peeled, deveined, tails removed
  • ½ cup sour cream
  • 1 avocado, mashed
  • 1 Tbsp. lime juice
  • 1 Tbsp. cilantro, chopped
  • ¼ tsp. salt
  • 16 corn tortillas, heated
  • 2 cups shredded cabbage

Directions

  1. Heat oven to 450°F. Coat a baking sheet with non-stick spray; set aside.
  2. Mix together sugar and spices in a bowl. Toss with shrimp and transfer to prepared pan. Bake 6-8 minutes until shrimp is pink and cooked through.
  3. Meanwhile mix together sour cream, avocado, lime juice, cilantro and salt; set aside.
  4. To assemble tacos, top 2 tortillas with ¼ cup slaw, ⅛ of the shrimp and avocado cream as desired. Refrigerate leftovers.
