Coconut Oil Dark Chocolate Truffles

Dairy-free truffles are easy to customize with a variety of toppings.
- Place chocolate chips and coconut oil in a large bowl. In a small sauce pan heat coconut cream over medium heat until almost boiling. Pour over chocolate and stir gently until fully combined. Add vanilla; refrigerate until firm, about 4 hours.
- Using a truffle scoop, form 1” balls; roll in hands to smooth out. Coat each ball in toppings of choice. Store refrigerated, up to 1 week.
Use as much of the solid white portion of the coconut cream as possible for a firmer truffle at room temperature. Make sure your chocolate is not made with milk solids to keep this treat dairy free.
