Dead Guy Ale and Ghost Pepper Cheddar Fondue

It’s spooky how addictive this cheesy beer-infused lava is! If you don’t have a fondue pot, use a small slow cooker set on the lowest setting to keep warm.


  • 2 cups (about 8 oz.) Kindred Creamery Ghost Pepper Colby Jack Cheese, grated, room temperature
  • 2 cups (about 8 oz.) Kindred Creamery Smoked Cheddar Cheese, grated, room temperature
  • 1 bottle (12 oz.) Dead Guy Ale
  • 2 Tbsp. cornstarch
  • 2 Tbsp. cold water
  • 1 clove garlic, crushed
  • 4 cups cubed pretzel rolls or rustic bread for dipping
  • 2 Granny Smith or Honeycrisp apples, cored and sliced for dipping


  1. In a large saucepan, heat the beer over medium heat until it just begins to bubble. Just before it begins to boil reduce heat to low and gradually stir in cheeses, stirring gently and allow each addition of cheese to melt before you add more.
  2. Stir the cornstarch into the cold water and add to the cheese mixture once the cheese has all melted. Cook over low heat until thickened.
  3. Rub the inside of the fondue pot or crock pot with the smashed clove of garlic and discard garlic or reserve for another use.
  4. Pour fondue into fondue pot and keep warm. Serve with cubes of bread and apple slices. Refrigerate leftovers.


Experiment with different proportions of cheeses to achieve desired result. Also, try other dippers such as fresh broccoli and cauliflower florets, tortilla chips or chicken fingers.
