French Onion Soup Grilled Cheese Sandwich

French onion soup in an easy-to-eat-sandwich – slow caramelized onions, rich melted cheese and crisp butter bread make the ultimate comfort food.


  • 2 Tbsp. butter
  • 2 sweet yellow onions, julienned
  • 1 Tbsp. dry sherry
  • 1 tsp. thyme, chopped
  • ½ tsp. reduced sodium beef base
  • 8 slices crusty sourdough bread
  • 8 oz. sliced gruyere cheese
  • 4 Tbsp. butter, softened


  1. In a medium skillet over medium-low heat, melt butter. Add onions and garlic; cook, stirring occasionally, until softened and then caramelized, 1½-2 minutes. Add sherry, thyme and beef base; continue cooking 3-5 minutes to blend flavors; remove from heat.
  2. To build sandwiches, top 4 slices of bread evenly with half the cheese, all the onions and the remaining cheese. Top with second slice of bread. Butter the outside of the sandwiches.
  3. Cook in a large skillet over medium heat 3-4 minutes until bread is golden brown, flip sandwiches and continue cooking 3-4 minutes until golden brown and cheese is melted. Serve immediately. Refrigerate leftovers.


Onions can be caramelized ahead of time and stored in the refrigerator for up to 5 days.
