Description

Inflammation fighting turmeric lends a golden hue to this whole grain breakfast.

Ingredients

  • 1 Tbsp. coconut oil
  • 1 tsp. turmeric
  • ½ tsp. cinnamon
  • ⅛ tsp. salt
  • 1 cup steel cut oats
  • 4 cups coconut milk (from the dairy aisle)
  • 2 Tbsp. honey
  • 1 tsp. vanilla

Directions

  1. Melt coconut oil in a 3-quart saucepan over medium heat. Add turmeric, cinnamon, salt and oats. Cook 1-2 minutes to toast slightly. Add milk, bring to a boil, reduce to a simmer and cook 25-30 minutes or until oats are tender.
  2. Stir in honey and vanilla. Serve with additional honey, cinnamon and coconut milk as desired. Refrigerate leftovers.
