Marinated strips of fresh chicken get skewered, grilled and slathered with a spicy peanut sauce.


  • ¼ cup Lime Juice
  • 2 tbsp Soy Sauce
  • 2 tbsp Seasoned Rice Wine Vinegar
  • 2 tbsp Honey
  • 2 tbsp Sriracha
  • 2 tbsp Fresh Ginger, grated
  • 1 tbsp Fish Sauce
  • 2 tsp Minced Garlic
  • 2 lbs Simple Truth Boneless, Skinless Chicken Breast, cut lengthwise into ½” thick strips
  • ½ cup Peanut Butter
  • 1 cup Coconut Milk
  • 24 (6-8") Bamboo Skewers, soaked in water for at least 20 minutes
  • ½ cup Chopped Peanuts
  • Fresh Cilantro Leaves


  1. Whisk together lime juice, soy, rice vinegar, honey, sriracha, ginger, fish sauce and garlic. Place half of the mixture in a ziptop food storage bag; add chicken. Allow to marinate in the refrigerator 1 hour.
  2. Blend remaining mixture with peanut butter and coconut milk. Refrigerate until ready to use.
  3. Heat grill gas grill to medium heat or charcoal until ashes are white.
  4. Thread each piece of chicken onto a skewer. Oil grill grates; grill 4-5 minutes, turning once until chicken reaches an internal temperature of 165°F.
  5. Garnish skewers with chopped peanuts and cilantro, serve with peanut sauce. Refrigerate leftovers.
