Grilled Eggplant Rolls with Goat Cheese

Try this make ahead appetizer that captures the simple fresh flavors of summer.


  • 1 eggplant, cut lengthwise into 1/4" slices
  • ⅓ cup olive oil
  • ½ tsp. Kosher salt
  • ½ tsp. fresh ground black pepper
  • ¼ tsp. garlic powder
  • 4 oz goat cheese
  • ½ tsp. thyme
  • ½ tsp. lemon zest


  1. Heat gas grill to medium or charcoal grill until coals are ash white. In a small bowl mix oil, salt, pepper and garlic.
  2. Brush oil mix on both sides of eggplant. Grill eggplant 3-5 minutes, turning once until grill marked and tender. Allow to cool.
  3. Meanwhile combine goat cheese, thyme and lemon zest.
  4. Cut eggplant slices in half lengthwise. Spread about 1 teaspoon goat cheese on each piece of grilled eggplant and roll-up. Refrigerate leftovers.


These can be served cold, room temperature or warm. To warm place in a 350°F oven for about 5 minutes.
