Grilled Oysters with Tarragon Butter

Cooking oysters on the grill takes only a couple of minutes with no shucking required! Try pairing these with Hogue Pinot Gris.


  • ¼ cup butter
  • 1 Tbsp. fresh tarragon, chopped
  • ¼ tsp. garlic, minced
  • 24 medium to large oysters, scrubbed clean
  • Hot sauce
  • Lemon wedges


  1. In a small sauce pan over low heat combine butter, herbs and garlic until butter is melted; set aside.
  2. Heat gas grill to medium or charcoal grill until coals are ash white.
  3. Place oysters on the grill, flat side up, and cook 4-8 minutes until oysters open slightly. Discard those that don’t open. Carefully transfer to a pan to retain juices, remove tops, serve with butter, hot sauce and lemon. Refrigerate leftovers.
