Description

Scallops cook in just minutes on the grill for a fresh meal fast.

Ingredients

  • 4 (10" each) bamboo skewers, soaked in water for at least 20 minutes
  • 12 large scallops
  • 1 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1 Tbsp. lemon zest
  • 1 tsp. garlic, minced
  • 1 tsp. kosher salt
  • ½ tsp. ground black pepper
  • 2 (½" thick) lemon slices, cut into quarters
  • 1 bunch green onions, cut into 2” pieces

Directions

  1. Heat grill. For gas, heat to medium and for charcoal heat until ashes are white.
  2. In a bowl mix together scallops, oil, lemon juice and zest, garlic, salt and pepper. On each skewer thread a few pieces of green onion, 1 scallop, a few pieces of green onion, 1 piece lemon, a few green onion, 1 scallop, a few pieces of green onion, 1 piece of lemon, a few pieces of green onion, 1 scallop and finish each skewer with a few pieces of green onion.
  3. Oil grill grate; place kebabs on grill. Cook, turning occasionally 7-10 minutes or until scallops are slightly firm to the touch and reach an internal temperature of 130°F.
  4. Refrigerate leftovers.
