These savory cakes are a fresh, springtime delight!


  • 10 oz. cauliflower florets
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 Tbsp. fresh parsley, minced
  • ½ cup panko breadcrumbs, plus more for coating
  • ½ cup Parmesan cheese, shredded
  • Sea salt and fresh ground black pepper
  • Simple Truth Organic® Olive Oil Spray


  1. Preheat oven to 400°F.
  2. Place cauliflower florets on a baking sheet lined with parchment paper and spray with olive oil. Place baking sheet in oven and roast for 15 minutes, or until florets begin to brown. Remove from oven and allow to cool slightly.
  3. While cauliflower is roasting, mix together panko, parsley and minced garlic and season with salt and pepper.
  4. Mix in the roasted cauliflower florets and egg, then mix all the ingredients until you have a dense mixture. Add in more panko if too wet, or an extra egg if too dry. Adjust seasoning.
  5. Form 12 patties with your hands and lightly coat with additional panko.
  6. Spray with olive oil on both sides and place on a baking sheet lined with parchment paper.
  7. Bake in the oven for 10 minutes on each side, or until crispy and golden-brown. Serve and enjoy!
