Simple homemade seed and oat granola adds the perfect crunchy sweet bite, layered with fresh mango and vanilla Greek yogurt.


  • 2 Tbsp. coconut oil, melted
  • 2 Tbsp. maple syrup
  • ½ tsp. ground cinnamon
  • ¼ tsp. fine salt
  • 1 cup old fashioned oats
  • ¼ cup raw sunflower seeds
  • ¼ cup raw pumpkin seeds
  • 2 Tbsp. chia seeds
  • 2 ripe mango, peeled and diced (about 2 cups)
  • 3 cups vanilla Greek yogurt


  1. Heat oven to 325°F. Line a baking sheet with parchment paper; set aside.
  2. In a bowl mix together coconut oil, maple syrup, cinnamon, salt, oats and seeds until well combined. Spread in an even layer on prepared pan. Bake 15-18 minutes; stir half way through, until golden brown and toasted. Allow to cool completely.
  3. When ready to serve, place ½ cup of yogurt in the base of a serving dish. Top each with ¼ cup of the mango and 2 tablespoons of granola. Repeat layering with ¼ cup yogurt, ¼ cup mango and 2 tablespoons granola. Serve immediately.
  4. Refrigerate leftovers.


Granola can be kept in an airtight container for up to 2 weeks.
