Massaged Kale Salad with Pomegranate and Avocado

Kale makes a great salad if you take time to give it a quick massage first – rubbing the leaves breaks down some of the tough fibers leaving a tasty, tender winter salad.


  • 2 Tbsp. fresh squeezed grapefruit juice
  • ½ Tbsp. honey
  • ½ Tbsp. shallot, finely chopped
  • ⅛ tsp. salt
  • ⅛ tsp. ground black pepper
  • ¼ cup olive oil
  • 1 bunch kale, ribs removed, chopped into thin strips
  • ½ cup pomegranate seeds
  • 1 avocado, cubed


  1. In a small bowl whisk together grapefruit juice, honey, shallot, salt, pepper and olive oil.
  2. Place kale in a large bowl. Add 2 tablespoons grapefruit vinaigrette. Use hands to rub vinaigrette into kale leaves, 1-2 minutes or until volume of kale is reduced by about half.
  3. Toss with pomegranate seeds and avocado cubes; adjust seasoning to taste. Refrigerate leftovers.
