Description

The fragrant combination of lemongrass, ginger and garlic makes these meatballs irresistible! Serve with tangy yogurt sauce for a touch of Mediterranean flavor.

Ingredients

  • 2 lbs. ground beef
  • 1 onion, minced
  • 4 cloves garlic, minced and divided
  • 2 Tbsp. soy sauce
  • 2 large eggs, beaten
  • 1 tsp. ginger, minced
  • 1 tsp. lemongrass, finely grated
  • 2 Tbsp. fresh parsley, chopped
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • 2 Tbsp. olive oil, divided
  • 3 cups Greek yogurt
  • 1 Tbsp. fresh lemon juice
  • 2 tsp. ground cumin
  • 1 tsp. curry powder
  • ¼ tsp. cayenne pepper

Directions

  1. Preheat oven to broil.
  2. In a bowl, mix together ground beef, onion, 2 cloves minced garlic, soy sauce, eggs, ginger, lemongrass, parsley, salt and pepper.
  3. Brush the baking sheet with 2 teaspoons oil. Roll 24 meatballs, 2" in size, and place 1½” apart on the baking sheet. Broil 6-8 minutes, turning once.
  4. Meanwhile, prepare yogurt sauce. In a bowl, mix yogurt, 2 cloves minced garlic, lemon juice, 1 tablespoon olive oil, cumin, curry and cayenne pepper. Add salt and pepper to taste. Serve meatballs with yogurt sauce on the side.
