Description

Crispy, juicy and spicy…these fried chicken bites win every time!

Ingredients

  • 1 lb. boneless skinless chicken breasts, cut into about 2” pieces
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 Tbsp. Kosher salt
  • 1 Tbsp. ground black pepper
  • 3 eggs
  • ½ cup hot sauce
  • ½ cup melted butter
  • 2 - 3 Tbsp. cayenne pepper
  • 1 Tbsp. brown sugar
  • 1 tsp. paprika
  • ½ tsp. garlic powder
  • Oil for frying
  • Pickle chips for serving

Directions

  1. Toss chicken pieces with buttermilk. Refrigerate at least 2 hours or overnight.
  2. In a pie plate or shallow bowl, whisk together flour, salt and pepper. In another bowl or pie plate, whisk together eggs and hot sauce.
  3. Remove chicken from buttermilk. Dip in flour mixture, shaking off excess, then in egg mixture and return to flour mixture; place on a baking sheet. Allow chicken to stand uncovered in the refrigerator for at least 15 minutes.
  4. In a bowl mix together butter, cayenne, brown sugar, paprika and garlic powder; set aside. Place a cooling rack over a baking pan; set aside.
  5. In a wide, heavy bottom pan heat 2-3-inches of oil to 350°F. Fry chicken in batches until golden brown and temperature reaches 165°F, about 5-8 minutes depending on thickness. Remove to prepared pan.
  6. Brush chicken generously with spicy butter mixture. Serve with pickle chips.
  7. Refrigerate leftovers.

Tips

Adjust the heat level of the chicken bites by increasing or decreasing the amount of cayenne in the butter sauce.
