  • 1 ½ cups All Purpose Flour
  • ¾ tsp Sea Salt
  • 1 ½ Sticks Unsalted Butter, chilled and cut into 1/4" cubes
  • 3 tbsp Ice Water
  • 1 cup Pecans, finely chopped
  • ½ cup Brown Sugar
  • ¼ cup Maple Syrup
  • 1 tbsp Bourbon
  • 1 tsp Orange Extract
  • 1 Egg
  • ¼ cup Butter, softened
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt
  • 48 Pecan Halves

  1. Pulse 1 cup of the flour with salt and butter in a food processor until dough begins to collect in clumps. Add the remaining ½ cup flour, scraping dough with a spatula and pulsing a few more times. Sprinkle in the ice water and pulse a few times to mix well. Press dough together and shape into a 4” disc, wrap in plastic and refrigerate for at least 2 hours.
  2. Preheat oven to 400°F. Prepare the filling by mixing the pecans, brown sugar, maple syrup, bourbon, egg, butter, vanilla extract and salt together in a food processor until smooth.
  3. Roll the dough out to about ⅛” thickness and cut into 48 (2½”) circles. Arrange the circles on parchment lined baking sheets. Top each pastry circle with about 1 teaspoon of the pecan filling and press a pecan half on top. Bake about 10-12 minutes, until pastry is golden.
