Pumpkin adds great creamy texture and seasonal flavor to the classic combination of polenta and shrimp.


  • 3 cups Chicken Stock
  • ½ cup Heavy Cream
  • ½ cup Pumpkin Puree
  • ½ tsp Kosher Salt
  • ¼ tsp Ground Black Pepper
  • 1 cup Polenta
  • ½ cup Grated Parmesan Cheese
  • 3 tbsp Butter, divided
  • 1 lb Raw Shrimp, peeled and deveined
  • 1 tsp Cajun Seasoning
  • Chopped Parsley or Chives, if desired


  1. In a 3 -quart sauce pan over medium-high heat bring chicken stock, cream, pumpkin, salt, and pepper to a boil. Slowly add polenta, whisking constantly to prevent lumps. Reduce heat to low, cook 5-10 minutes, stirring occasionally until smooth and liquid is absorbed. Stir in cheese and 2 tablespoons of butter.
  2. Meanwhile melt remaining butter in a large skillet over medium-high heat. Toss shrimp with seasoning. Cook in skillet 3-5 minutes, turning once, until pink and just cooked through. Serve shrimp on top of polenta. Garnish with fresh herbs if desired.
  3. Refrigerate leftovers.
