Add some veggies with side of color to your next party spread with this delicious hummus.


  • 1 head purple cauliflower, cut into florets (about 3 cups)
  • 1 can (15 oz.) cannellini beans, drained and rinsed
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 2 Tbsp. tahini paste
  • 1 tsp. minced garlic
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. cayenne pepper


  1. Place cauliflower florets in a steamer insert over boiling water. Cover and steam 6-8 minutes until tender. Rinse with cold water cool.
  2. Place cauliflower, beans, oil, lemon juice, tahini, garlic, salt and pepper in the bowl of a food processor. Process until smooth. Refrigerate leftovers.
  3. Garnish with a drizzle of olive oil, sprinkle of herbs, and some ground pepper.


Lemon juice turns the purple cauliflower pink. You can leave the lemon juice out and add at the time of serving to wow your guest with the color change.
