A seasonal twist on hummus – roasted garlic, pumpkin puree and garbanzo beans. A perfect dip for fresh vegetables, chips and crackers.


  • 1 head garlic, top cut off to expose cloves
  • 1 tsp. olive oil
  • 1 can (15 oz.) garbanzo beans, drained and rinsed
  • 1 cup pumpkin puree
  • ½ cup olive oil
  • 2 Tbsp. water
  • ¾ tsp. salt
  • ¼ tsp. pepper
  • 2 Tbsp. pepitas, toasted
  • 1 Tbsp. olive oil


  1. Preheat oven to 400° F. Place garlic head in the center of a piece of aluminum foil. Drizzle with olive oil and wrap in the foil to cover. Bake 50-55 minutes or until garlic is soft and golden brown.
  2. Cool slightly and squeeze garlic paste into the bowl of a food processor.
  3. Add beans, pumpkin, olive oil, water, salt and pepper to the garlic. Pulse until smooth.
  4. Transfer to a serving bowl and garnish with toasted pepitas and additional olive oil.
  5. Refrigerate leftovers.
