Raise your hand if you love apple pie! These mini-pies are easy to serve….no forks or pie server needed!


  • 1 package (2 crusts) prepared pie dough
  • 2 small baking apples, like Granny Smith or Fuji, cored, peeled and finely diced, about 1½ cups
  • 1 tsp. lemon juice
  • ½ tsp. ground cinnamon
  • 1 Tbsp. brown sugar
  • 1 Tbsp. melted butter
  • 1 ½ tsp. all-purpose flour
  • 5 - 8 artisan caramels, cut into small pieces, about ¼ cup
  • 1 tsp. Maldon’s flake salt, or other coarse sea salt
  • 1 egg beaten with 1 tsp. water
  • Coarse decorator sugar or Sugar in the Raw for garnish, if desired


  1. Preheat oven to 400°F and line a baking pan with parchment paper. Bring dough to room temperature so that it will be workable.
  2. Mix apples, lemon juice, cinnamon, brown sugar, butter and flour together in a medium bowl.
  3. Dust a cutting board with a little flour and lightly roll out one pie crust round to flatten and cut 10 circles with a 3” round cookie cutter. You may need to re-roll the scraps, but do your best to cut the dough judiciously. Place the 10 dough rounds on parchment lined baking sheet.
  4. Brush each round with the beaten egg and top each with 1 Tablespoon of the apple filing. Top each mound of apple filling with a few pieces of the caramel pieces, about 1 teaspoon. Sprinkle each with a pinch of the sea salt.
  5. Roll out the other round of pie dough and cut 10 more 3” circles of dough. Roll each dough circle to make it slightly larger than 3” and cut 3 slits in each round. Top the apple filled dough rounds and press the edges with a fork to seal edges of the pies. Brush each pie with remaining egg wash and sprinkle with coarse sugar if desired.
  6. Bake for 15-20 minutes until pies are golden and caramel is bubbling through the slits.
