Dark chocolate with Himalayan sea salt and a browned buttery crust make this tart phenomenal. Glazed organic strawberries are layered across the top of the chocolate for an extra-special presentation. Wait until just before serving to add the strawberries.


  • Crust

    6 Tbsp. unsalted butter, cubed
  • 3 Tbsp. water
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. sugar
  • 1 cup flour
  • Filling

    3 bars (3.18 oz. each) BIJA Dark Chocolate with Himalayan Sea Salt, roughly chopped
  • 1 tsp. sugar
  • 1 cup heavy cream
  • 1 Tbsp. butter
  • ½ lb. organic strawberries, tops removed, sliced top to bottom into ¼” slices
  • 1 Tbsp. strawberry jam
  • Crème fraîche, to taste


  1. Heat the oven to 400° F. Stir together the butter, water, oil and sugar in an oven-safe mixing bowl. Place the bowl in the oven.
  2. Bake the butter mixture until it bubbles and caramelizes around the edges, about 15 minutes. Take the bowl from the oven and stir in the flour.
  3. Stir the dough until it comes together in a ball. Turn out the dough into a 9” fluted tart pan with a removable bottom.
  4. Press the dough into the tart pan. Prick the dough on the bottom several times using a fork. Place the crust in the oven.
  5. Bake the crust until browned, about 12 minutes. Take the crust out and set it on a cooling rack. Let cool for 1 hour.
  6. Add the chocolate and sugar to a mixing bowl. Bring the cream to a boil in a saucepan.
  7. Hold a sieve over the chocolate and pour the boiling cream through it. Add the butter. Stir the filling until it's glossy and uniform in color, about 5 minutes.
  8. Pour the filling into the cooled tart crust. Chill the tart in the refrigerator for 1 hour.
  9. Place the sliced strawberries in a bowl. Melt the jam in the microwave (30 seconds) or in a saucepan on the stove over low heat until it's runny.
  10. Pour the melted jam over the strawberries and stir them to coat. Take the cooled tart out of the refrigerator about 15 minutes before you want to serve it.
  11. Lay the glazed strawberries on the tart in a clockwise pattern. Overlap the slices slightly as you work your way around the tart. Serve immediately with chilled crème fraîche on the side.
