Description

Cut the carbs and up the nutrition with these cauliflower-spiked mashed potatoes.

Ingredients

  • 2 lbs Russet Potatoes, peeled and large diced
  • 1 head Cauliflower, cut into florets (about 4 cups)
  • 1 clove Garlic, peeled and smashed
  • ¾ cup Half and Half, warm
  • ¼ cup Butter, melted
  • ½ tsp Kosher Salt

Directions

  1. Place potatoes, cauliflower and garlic in a 4 -quart saucepan; cover with cold salted water. Cover; bring to a boil. Remove lid, reduce heat slightly and cook 8-10 minutes until vegetables are tender. Drain and return to the pan.
  2. While hot, mash together with half and half, butter and salt.
  3. Refrigerate leftovers.
