Strawberry rhubarb simple syrup captures the flavors of the season for a refreshing homemade soda.


  • 1 lb. strawberries, stems removed and cut in half
  • 1 lb. rhubarb, roughly chopped
  • 2” piece ginger, cut into slices
  • 3 strips lemon peel, about 1”x 3”
  • 1 cup sugar
  • 1 cup water


  1. Combine fruit, ginger, lemon peel, sugar and water in a sauce pan; bring to a boil and reduce to a simmer. Cook 15-20 minutes until fruit is very soft. Remove from heat and allow to cool at least 30 minutes.
  2. Pour mixture through a fine mesh strainer. Discard solids. Refrigerate to cool completely.
  3. To make soda start with 1 tablespoon of syrup for every 2 oz. of soda water added to a glass filled with ice. Add more syrup to taste.
  4. Store syrup in a covered container in the refrigerator up to 2 weeks.


Syrup also works well in cocktails. Try adding vodka or gin to your soda for a refreshing adult beverage.
