Creamy roasted red pepper spread in tender artichokes topped with crunchy buttered bread crumbs are a great start to any meal.


  • 1 can (14 oz.) artichoke bottoms, drained and patted dry
  • 2 oz. cream cheese, softened
  • ¼ cup roasted red peppers, drained, patted dry and finely chopped
  • 2 Tbsp. shredded Parmesan cheese
  • 1 Tbsp. Italian parsley, chopped
  • ¼ tsp. garlic, minced
  • Pinch of salt and pepper
  • 3 Tbsp. panko breadcrumbs
  • 1 Tbsp. butter, melted


  1. Heat oven to 425°F. Trim artichokes, if needed, to sit flat; place on a baking sheet. Set aside.
  2. Mix together cream cheese, peppers, cheese, parsley and garlic. Evenly divide between artichokes.
  3. In a small bowl mix together breadcrumbs and butter. Sprinkle evenly on each filled artichoke. Bake 8-10 minutes until browned. Refrigerate leftovers.
