Thinly sliced sweet potatoes are layered with garlic, cream, rosemary and Parmesan for a savory take on a classic Thanksgiving side.


  • 1 tsp. garlic, minced
  • 1 cup heavy cream
  • 1 Tbsp. rosemary, finely chopped
  • 2 ½ lbs. sweet potatoes, thinly sliced
  • 1 tsp. Kosher salt
  • ½ tsp. ground black pepper
  • 4 oz. Parmesan cheese, freshly grated


  1. Heat oven to 350°F. Butter a 9”x13” casserole dish; set aside.
  2. In a large bowl mix together garlic, cream and rosemary. Add potato slices and toss gently to coat.
  3. Layer potato slices, overlapping slightly, in a single layer in the prepared dish. Top with ¼ each salt, pepper and cheese. Repeat layers three more times ending with cheese.
  4. Cover pan with foil and bake 45 minutes until potatoes are just tender. Remove foil and continue baking 10-15 minutes or until golden around the edges. Refrigerate leftovers.


Try mixing and matching different colors of sweet potatoes and yams for more visual interest.

A mandoline can be helpful to slice potatoes thinly and evenly.
