Sweet potatoes mix into traditional latkes for a subtle sweet twist.


  • ½ lb. sweet potatoes, peeled and grated
  • ½ lb. russet potatoes, peeled, grated, rinsed and squeezed dry
  • ¼ cup onion, finely chopped
  • 2 eggs
  • ¼ cup flour
  • 1 Tsp. Kosher salt
  • ½ tsp. ground black pepper
  • Vegetable Oil
  • Applesauce
  • Sour Cream
  • Chives


  1. Combine potatoes, onion, eggs, flour, salt and pepper in a bowl.
  2. Fill a 12” skillet with vegetable oil until depth reaches approximately ¼”, and cook at medium-high heat. Drop 2 tablespoons of potato mixture into the oil, flattening slightly. Cook 2-3 minutes until golden brown. Flip, cooking another 2-3 minutes until golden brown and cooked through. Serve immediately with applesauce, sour cream and chives as desired. Refrigerate leftovers.


Rinsing and drying the potatoes removes extra starch, helping to keep the latkes crisp.
