Description

Try this perfect potluck pasta salad with patriotic red, white and blue flair.

Ingredients

  • ¼ cup Red Wine Vinegar
  • 8 - 10 Fresh Basil Leaves
  • 1 tsp Dijon Mustard
  • 1 tsp Sugar
  • 1 Garlic Clove, small
  • ¼ tsp Salt
  • ¼ tsp Ground Black Pepper
  • ¼ cup Olive Oil
  • 1 pkg Refrigerator Cheese Tortellini, (18 oz)
  • 2 cups Grape Tomatoes, cut in half
  • ½ cup Roth Buttermilk Blue Cheese

Directions

  1. In a blender add vinegar, basil, mustard, sugar, garlic, salt, pepper and oil. Blend until smooth and well mixed; set aside.
  2. Prepare tortellini according to package directions and allow to cool 5 minutes.
  3. In a large bowl toss together tortellini, tomatoes, blue cheese and dressing. Refrigerate for at least 30 minutes to allow flavors to blend. Refrigerate leftovers.
