Description

Shredded apples keep these meatballs tender and moist.

Ingredients

  • 1 lb ground turkey, lean
  • 1 small onion, grated
  • 1 apple, peeled and grated
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg, beaten
  • ½ tsp garlic, minced
  • 2 ¼ tsp kosher salt, divided
  • 1 tsp ground black pepper
  • 1 cup cranberries, fresh or frozen
  • 2 tbsp bourbon
  • 6 tbsp water
  • ½ cup sugar
  • ¼ cup ketchup
  • ½ tsp garlic powder
  • ½ tsp dried mustard

Directions

  1. Heat oven to 375°F. Spray a pan with nonstick cooking spray; set aside
  2. Mix together turkey, onion, apple, breadcrumbs, milk, egg, garlic, ¼ teaspoon salt and pepper. Form into 1½” meatballs and place on prepared pan.
  3. Bake 18-22 minutes until internal temperature reaches 165°F.
  4. Meanwhile in a small sauce pan over medium heat, combine cranberries, bourbon, water, sugar, ketchup, garlic, mustard and 2 teaspoons salt. Bring to a boil, reduce heat and simmer 8-10 minutes until cranberries burst. Toss meatballs with sauce before serving.
  5. Refrigerate leftovers.
